The outer portion of the tree (under the bark) contains the phloem http://en.wikipedia.org/wiki/Phloem. If this tree is still alive, it has just enough xylem to keep the tree hydrated. You don’t need to core of the tree for it to remain alive.
What caused it to be hollow? No idea. Possibilities include physical damage (e.g. tunneling)caused by humans or animals, rot
