Are you totally insane? I was once in Montreal with a -40F with windchill, and it was a feat even to go from the car to the restaurant’s door and back.
The worst part was 2-1/2 miles straight into the wind on a fat tires. Mountain bikes have too much friction anyway, and you throw in a headwind and they get dead slow.
What kind of gear do you wear? In conditions like that, nothing short of an Apollo spacesuit replica would do for me. But then I wouldn’t be able to ride anywhere, I suppose

We came back to the US after 26 years in the tropics — to SD — for the worst winter in 100 years. A couple of times the wind chill temps dropped to -70F. Snow buried our house. We moved to Arkansas, and were hit with the worst ice storm in memory. Even Massachusetts looked better, so I came here to look for jobs – now we’re having the 3rd worst winter storm in the last 100 years. (The second worst was a week ago.)
I just applied for a consultancy in Bermuda (no joke) and I don’t expect a blizzard there.

Might i suggest a stationary bike, that way you stay nice and warm and do not become a popcical. Plus a whole lot less of a chance of catching phnemonia!
Since you are riding, the wind speed means more than wind chill. You create your own windchill just by riding the bike, but as you noted, when it is a headwind, biking is a bitch.
